Butternut is a butternut squash. Also called doubeurre or peanut squash because of its elongated shape, it is one of the emblematic vegetables of the fall season.
butternut squash eaten only cooked, whether roasted, au gratin or pureed. It goes wonderfully with spices (curry, nutmeg, cinnamon, cardamom or ginger in particular), chestnuts, hazelnuts, cheese or even coconut milk. Thanks to its mild and sweet flavor, it also lends itself to desserts, such as pies and muffins.
During its preparation, do not throw away its seeds. Once cleaned, they can be grilled to sprinkle on veloutés or simply to be pecked at as an aperitif.
In addition to being very greedy, butternut squash is a food rich in fiber, ideal for ensuring intestinal well-being. It also contains vitamin A, which contributes (among other things) to the health of the mucous membranes and skin, as well as that of sight (especially in the dark). Its orange color also reveals the presence of carotenoids, and in particular beta-carotene, a powerful antioxidant.
