Very tasty burgers made from quinoa.
Ingredients

60 grams quinoa (preferably in 2 colors)

100 grams sweet potato

100 grams of radishes

2 tablespoons vinegar

pinch of sugar

1 shallot

1 garlic clove

3 tablespoons olive oil

1 egg
-
20 grams grated pecorino or Parmesan cheese

25 to 30 grams of oatmeal

2 sourdough buns
-
3 or 4 tablespoons ricotta
-
a few handfuls of arugula
Preparation
Pour 100 ml of boiling water over the quinoa, cover and let it rest for 20 minutes. Meanwhile, peel the sweet potato and cut it into very small cubes. Boil the sweet potato in a little water for 10 minutes. Cut the radishes into thin slices and mix them with the vinegar, sugar, some salt and pepper. Set aside. Drain the quinoa. Chop the shallot and garlic and fry for a few minutes in 1 tablespoon of olive oil. Mash the sweet potato with a fork and mix with the quinoa, together with the shallot and garlic. Break the egg on top and fold it into the mixture with the grated cheese. Add the oats and form the mixture into 2 firm burgers. Use a little more oatmeal if you like. Heat the rest of the olive oil in a frying pan and fry the burgers for 5 minutes until crispy on the outside. Cut open the buns and top each bun with ricotta, a burger and arugula; top with the sweet and sour radishes. Delicious with a spicy tomato sauce.

Leftover cooked grains from a meal? Process them into a burger the next day, as in this recipe.
