This recipe is for two pancakes.
Ingredients

2 eggs

50 grams oatmeal flour (or regular wholemeal flour)

100 grams grated zucchini

1/2 avocado
-
20 grams of ricotta
-
lemon juice
-
pepper and salt
Preparation
- Use the immersion blender to make a smooth mousse from the avocado, lemon juice and salt and pepper to taste.
- Mix the flour with the zucchini and the eggs to a batter.
- Fry the pancakes in a little oil for about 2 minutes per side.
- Serve with a layer of avocado mousse and ricotta.
