With or without pits? According to grandma, you should prepare your cherry clafoutis with pits: so as not to soak the dough and keep the cherries very juicy. But with budding gourmands, it may be safer to remove the core before preparation. And then, let’s face it, it’s easier to eat!
The cherry clafoutis recipe
Ingredients :
- 500g cherries
- 4 eggs
- 125 g of sugar + 1 tbsp. at s. for the mold
- 150g flour
- 40 cl whole milk
- 2 tbsp. c. liquid vanilla extract
- 1 pinch of salt
- Butter for the mold
Recipe
- Preheat the oven to th. 6-7 (200°C). Rinse and hull the cherries.
- Spread them in a 22 cm diameter oven dish buttered and sprinkled with the tablespoon of sugar.
- In a bowl, mix the flour, salt and sugar.
- Add the eggs.
- Whisk, adding the milk and liquid vanilla extract little by little until you obtain a smooth paste. Pour the preparation over the cherries.
- Bake 35 to 40 mins.
The cherry clafoutis revisited
>> The slimming version of the clafoutis: no powdered sugar, but 100 g of honey. And use semi-skimmed or skimmed milk instead.
>> Gluten-free clafoutis: replace the wheat flour with 120 g of cornstarch (Maïzena), to be dissolved in the milk beforehand. Whisk the eggs with the sugar, salt and vanilla extract, then pour in the milk with the cornflour.
>> The vegan clafoutis: prepare a device without eggs or milk, by mixing 125 g of rice flour, 25 g of cornstarch, 50 g of almond powder, 125 g of sugar, 50 g of almond puree and 40 cl of rice milk.
>> Lactose-free clafoutis: use almond milk instead of cow’s milk. To preserve the creaminess of the dessert, add 1 tbsp. ground almonds.
