Far from being boring, here is a pea that contains more than one health benefit. From the legume family, the split pea is a variety of peas harvested when ripe and left to dry. Once dry, it separates in two once shelled, hence its little name of “split” pea. It is often prepared in puree or soup. But it also lends itself to innovative recipes such as hummus or parmentier.
