This is how you process leftover fruit
It is best to process fruit that has ripened too quickly, otherwise it will spoil and throwing it away is the only option. That’s a shame. We give you three tasty ways to process (overripe) fruit.
1. In a crumble
Whether you eat it for breakfast or as a dessert (or as a ‘cake’ with coffee), a crumble is always delicious.
- 500 grams of ripe fruit
- 4 tablespoons of honey
- 50 grams of oatmeal
- 50 grams (spelt) flour
- 50 grams of butter
Preheat the oven to 200° C. Mix the honey with the oatmeal and (spelt) flour. Cut the butter in it with a knife into very small pieces. Crumble the butter with your fingertips and mix. Continue until you have a nice crumbly dough. There should be some larger crumbs in between. Divide the fruit over a flat, greased ovenproof dish (approx. 25 cm in diameter) or over small single oven dishes. Divide the crumbs over the fruit and place in the middle of the preheated oven for 20 minutes.
2. In a smoothie
- 500 grams of fruit
- 200 ml yogurt
For two large glasses, take 500 grams of fruit. Clean the fruit and puree it with an immersion blender. Mix in 200 ml yogurt. If you like a sweet taste you can always add a little honey.
3. In a salad
Ripe fruit gives your salad color and flavor. Clean the fruit, cut it into pieces and mix it with lettuce, spinach leaves or arugula. Add some nuts or some (goat) cheese and make a honey-mustard dressing for it. Your lunch salad is ready.
