The basic panna cotta recipe
The ingredients for 4 people
- 50 cl of liquid cream
- 2 sheets of gelatin
- 50g sugar
- 1 C. c. vanilla extract
- red fruit coulis (optional)
Recipe
- Soak the gelatin sheets in cold water and let them soften for 5 min.
- Pour the cream into a saucepan with the sugar and vanilla extract. Heat.
- When simmering, remove from the heat and add the drained gelatin. Mix well and divide into ramekins.
- Leave to cool then chill in the fridge for about 3 hours.
- Drizzle with red fruit coulis (optional).
Lactose-free panna cotta
Replace the liquid cream with a mixture of 20 cl of vegetable milk (rice, almond, soy…) and 30 cl of coconut milk (for smoothness).
Vegan panna cotta
Follow the lactose-free recipe, and also replace the gelatin with 2 g of agar-agar, diluted in the cold liquid. Bring to a simmer while stirring, and cook for 1 to 2 minutes, stirring constantly.
The slim version of panna cotta
Heat 20 cl of skimmed milk then dissolve the drained gelatin. Leave to cool, add 50 g of honey then, little by little, 300 g of 0% fromage blanc (while whisking vigorously between each addition to avoid creating lumps).
Low GI panna cotta
Use coconut blossom sugar instead of sugar (glycemic index of 35 against 70 for sugar). But the panna cotta will then take on a darker shade.
