apple pie recipe
Ingredients for a pie for 4 people
- 200g flour
- 100g butter
- 1 pinch of salt
- 6 apples
- 2 tbsp. at s. brown sugar
- 1 lemon
- a few pinches of cinnamon
Recipe
- Mix the flour with the butter cut into small pieces, 1 pinch of salt and a little water to obtain a smooth and homogeneous paste. Form a flattened ball and leave to rest for 2 hours in the fridge.
- Trick : To help you handle the dough (crumbly), spread it on a sheet of parchment paper and install everything in the pie pan, without removing the paper. Continue the recipe.
- Peel 2 apples and cut them into pieces. Cook them with a little water and the cinnamon until they are tender (15 min), mix. Let cool. Peel the remaining apples and cut them into even strips. Lemon them to prevent them from turning black.
- Preheat the oven to 180°C (th. 6). Roll out the dough, line a mold. Spread the cooled compote, the apple slices on top, sprinkle with sugar, then cook for about 30 minutes.

The slimming version of apple pie
For a lighter version, make a pie without dough! Fill a mold butter (in clay or in glass) with quartered apples, cover with a preparation (100 g of sugar whipped with 3 eggs, 40 cl of semi-skimmed milk, cinnamon then 130 g of flour). Bake for 30 minutes in the oven at 180°C.
Gluten-free apple pie
For the dough, replace wheat flour with rice flour.
The super-low GI version
Make a shortcrust pastry with hulled barley flour (glycemic index 30). You can find it in organic stores or on the Internet (www.bienmanger.com, www.webecologie.com…). And replace the brown sugar with agave syrup.
