Preparation
- Peel the zucchini in a peeler then cut them into spaghetti using a mandolin.
- Whisk the lemon juice with the oil, salt lightly.
- Combine the zucchini and the sauce in a salad bowl.
- Add the tomatoes cut into quarters, finely chopped red onion and mint leaves.
- Brown the pine nuts for a few moments in a non-stick pan without letting them darken.
- Sprinkle it over the salad and serve immediately.
Pine nuts are certainly rich in lipids, but they contain a compound with appetite suppressant effects. We therefore do not hesitate to sprinkle some on salads or cooked vegetables.
