Preparation
- Peel the pumpkin and dice the flesh. Peel the tomatoes and dice them (remove the seeds).
- Bring the broth to the boil, add the peeled and minced garlic cloves, the pasta and the diced pumpkin, and cook for 10 minutes. Add the diced tomatoes and the coarsely chopped spinach leaves, cook for another 5 min. Salt and pepper.
Health tips
Despite its almost sweet taste, pumpkin remains a very low calorie vegetable (20 Cal. Per 100 g on average). Diced in soups, fried vegetables, pasta or gratins, it alleviates the caloric addition of the recipe without compromising on gluttony.
