Preperation
- Remove the stems and cut the green beans in half.
- Finely chop the chives.
- Bring a large volume of water to a boil with the chicken stock and a few pinches of salt.
- Immerse the twists and beans and cook for 10 minutes.
- Drain them, return them to the saucepan, add the cooking almonds, chives, mix and adjust the salt.
- Slice the almonds with a knife and roast them in a dry pan for 5 minutes.
- To cook the chicken livers, pour 2 tablespoons of sunflower-olive oil in a pan. When the oil is hot, add the livers, cook them for 3 minutes on each side so that they are pink in the center.
- Deglaze and salt them, adding the balsamic vinegar and soy sauce.
- Cook for another 2 minutes and serve on each plate in the middle of the bean twists.
- Sprinkle with almonds and enjoy immediately.
