A tasty, healthy snack
Ever heard of beetroot balls? They are round snacks that are reminiscent of bitterballen, but healthier and made from beetroot. That’s how you make them.
Ingredients
- 200 g cooked red beets
- 1 small red onion
- 1 clove of garlic
- 250 g cooked chickpeas
- 50 g oatmeal
- 1 teaspoon smoked paprika powder
- 1 teaspoon cumin powder
- 1 egg
Prepare
- Cut the beets into pieces. Chop the onion and crush the garlic. Place the beetroot, onion, garlic and chickpeas in a food processor and blend into a beetroot mixture. Do not make the mixture too fine, there may still be ‘pieces’ in it.
- Place the beet mixture in a bowl and mix well with the oatmeal, paprika, cumin, beaten egg, pepper and possibly some salt.
- Let this mixture rest in the fridge for at least 15 minutes to firm up.
- Preheat the oven to 180° Celsius and line a baking tray with baking paper.
- Roll firm balls the size of a bitterbal from the beet mixture
- Place the balls on the baking tray and bake the balls for 20-25 minutes until cooked and slightly browned.
- Nice with a guacamole dip or just with tomato ketchup.
