A classic! Did you know that this stew is so called because the apples keep it hot for so long? Be careful not to burn your mouth!

Ingredients
- 2 onions
- 800 grams of floury potatoes
- 800 grams of apples (half sour like Goudreinet, the other half sweet like Jonagold or Gala)
- 1 teaspoon cinnamon
- knob of butter
Preparation
- Peel the onions and cut them into pieces.
- Peel the potatoes and cut them into wedges.
- Peel the apples, remove the core and cut into pieces (about 2 to 3 centimeters).
- Place the potatoes, onion, apple and cinnamon in a pan and pour in enough water to cover everything.
- Bring to the boil and let it cook for 15 to 20 minutes.
- Remove 1 glass of the cooking liquid from the pan and pour off the rest of the cooking liquid.
- Mash the potatoes with apples into a puree.
- Stir in the butter.
- Add a dash of the cooking liquid to make the hot lightning a little more creamy.
- Season the hot lightning with salt.
Tips
- Delicious with hash.
- Serve the veg with chopped roasted hazelnuts.
- You can also replace the sweet apples with sweet pears.
