Sweet potatoes are so delicious! You can go in many directions with it. Have you ever tried a stuffed sweet potato?
Ingredients

4 large sweet potatoes

100 grams of feta

150 grams smoked chicken breast

1 teaspoon smoked paprika powder

Bunch of fresh parsley

Preparation
- Preheat the oven to 200 degrees Celsius. Scrub 4 large sweet potatoes. Wrap them in aluminum foil. Place them in a baking dish in the hot oven and bake for 45 minutes. (this yarn can also be used on the barbecue)
- Meanwhile, cut the feta into small pieces. Also finely chop the smoked chicken breast.
- Remove the aluminum foil from the cooked potatoes. Cut the top of the potatoes and press them open slightly. Remove the center of the pulp. Leave about 1 cm on the edges.
- Mix the separated sweet potato with the feta, chicken breast, smoked paprika and some salt and pepper. Spoon everything back into the potato and put the whole thing in the hot oven (or in a bowl on the barbecue) for another 10 minutes.
- Finely chop the parsley. Serve the sweet potato with the parsley and with sour cream and homemade guacamole. Delicious with a fresh salad.
