300 grams carrots

2 tablespoons crushed linseed

6 medjoulders

100 ml sunflower oil (or coconut oil)

300 grams wholemeal flour

1 teaspoon baking powder

1 teaspoon cinnamon powder

100 grams coarsely chopped walnuts
Preparation
Requirements: baking tin with a diameter of about 22 cm.
- Preheat the oven to 190 C. Finely grate the carrot (a food processor is useful for this).
- Soak the linseed in 150 ml of hot water. Cut the medjoul dates into small pieces. Spoon this through the linseed.
- Mix in the oil and honey (the amount of honey depends on how much sweet you want to use).
- In another bowl, mix the flour with the baking powder, cinnamon, carrot and chopped walnuts. Fold the dry ingredients into the linseed-oil mixture.
- Pour the batter into the greased baking pan and bake the cake in the middle of the oven for about 45 minutes.
