Main course for 4-6 people

2-2.5 hours stew time
Ingredients:
- 800 grams of scallops or threaded beef
- 1 onion
- 1 small winter carrot
- 2 stalks celery
- 8 tablespoons olive oil or 100 grams butter
- 300 ml red wine
- 1 can of peeled tomatoes (or 400 grams of fresh tomatoes)
- 2 bay leaves
- 3 sprigs of thyme
- ½ tablespoon dried oregano
- ½ teaspoon salt freshly ground pepper
- 100 grams pitted black olives
- basil or parsley
Prepare
- Cut the meat into cubes of about 3 cm. Pat the meat dry and let it come to room temperature for about 15 minutes.
- Chop the onion, winter carrot and celery. Heat the olive oil or butter in a frying pan and fry the chopped vegetables for 3 minutes. Add the meat and brown it all over.
- Pour the wine and tomatoes over the meat. Add bay leaves, thyme, dried oregano, salt and pepper. Let the meat simmer for 2-2 ½ hours. Stir occasionally and make sure it doesn’t get dry. In that case, add some water or wine.
- Add the olives during the last 10 minutes. Remove the bay leaf and thyme from the sauce and season the sauce with salt and pepper, if desired, and snip some fresh basil on top.
