
Pasta is wrongly called a fattener. Usually the high-calorie cream sauces are the culprit, not the pasta itself. The French diet guru Anne Dufour writes in Het Pastadiet how you can lose weight by eating pasta. For example with this healthy Italian vegetable soup.
Ingredients

1 onion

1 garlic clove

2 peeled tomatoes

1 zucchini

1 carrot

200 grams haricots verts (fresh or frozen)

1 tablespoon olive oil

4 tablespoons elbow macaroni

2 tablespoons pesto

freshly ground salt and pepper
Preparation
Peel and chop the onion and garlic. Remove the seeds and cut the tomato flesh into cubes. Cut the courgette and carrot into cubes, cut the haricots verts into pieces.
Heat the oil in a frying pan and fry the onion with the garlic until translucent. Stir in the vegetables and cook for a further 3 minutes. Pour 1.5 liters of water into the pan and bring to the boil. Add the macaroni, lower the heat and let the soup cook for another 5 minutes. Stir the pesto into the soup, season with salt and pepper.
Serve the soup with a salad and some cold meat, such as roast beef, pork fricandeau, roasted chicken or lean ham. You can eat this soup hot or ice cold!
