Preparation
Peel and cut the onion into very small dice as well as the tomato (remove the seeds), the pickles and the capers. Cut the veal into very small dice with a sharp knife. Season with salt and pepper, add the onion, pickles, capers, tomato and herbs. peel the cucumber, remove the seeds and grate it.
Arrange the tartare in circles, tamp well then remove the circles. decorate with a little grated cucumber and mint leaves. serve immediately.
