Preparation
- Heat 1 tbsp. tablespoons of oil in a pan and brown the turkey meat cut into 4 cutlets over very low heat, about 10 to 15 minutes, turning them regularly. Remove from the heat, let cool then cut into thin slices.
- Detach the pomegranate seeds from their rind and the white membranes that separate them. Put them in a salad bowl with the spinach leaves, pistachios, coriander leaves and turkey strips.
- Whisk the lemon juice with the remaining oil and a little turmeric (dose according to your taste). Pour into the bowl and mix gently.
Health tips
The pomegranate is illustrated by record levels of antioxidants. Red and crunchy, its arils (grains) can be used in all sauces: in mixed salads, fruit salads, on rice or chicken in sauce, as the Iranians do… Enjoy it! As for turmeric, it stimulates the liver and promotes the production of enzymes in charge of detoxification.
