A light variant on heavy fare
As soon as autumn shows its best – or worst – side, we also eat heavier dishes more often. Stew, kale or sauerkraut. Tasty stews, but quite high in calories. And preferably you also go through the winter slim.
When it gets colder, we opt en masse for hearty stews. This is how we are programmed: winter food provides more calories that you can use well in the winter to stay at the right temperature. Our bodies used to need that much more than now. However, that does not mean that you should miss the autumn and winter products should now be left behind. But it could be a little slimmer
lots of vegetables
With a stew recipe you often do not reach the recommended 250 grams of vegetables per person. You eat relatively more potatoes. By increasing the amount of vegetables in the stew, you automatically eat more vegetables and fewer carbohydrates. Also try to vary: a spinach stew is delicious with (sun-dried) tomato or bell pepper, for example. Fruit (apple or pineapple) also gives a stew that little bit extra.
Slim Puree
Mashed potatoes are often prepared with a lot of (cream) butter and milk and are therefore very high in calories. Adding so much butter and milk is not necessary at all. A small lump of margarine is usually sufficient. You can also make the puree smooth with some leftover cooking liquid. This is especially nice if you cook the potatoes in stock. With mustard or red wine vinegar you can create a very tasty puree.
Lean meat
For many people, a hearty plate of stew is accompanied by a tasty piece of meat. Many people prefer a meatball, bacon (lap) or smoked sausage. Not the healthiest options. If you’re going for a meatball, opt for ground beef or a tartar. Ham cubes are a good alternative to bacon through the stamp. Smoked chicken breast is an even leaner choice. If your stew really cannot do without smoked sausage, it is best to opt for a leaner one.
smart gravy
What could be better than filling a well in the middle of your stew with a good gravy? Unfortunately, the gravy made from cooking fat from fatty meats contains quite a few calories. A packet is usually a healthier choice. There are also lean varieties, but that has to be your taste. If you do want to make your own gravy, add water to the leftover butter in the pan. With some extra herbs or, for example, soy sauce, you can flavor the gravy even more. Do you prefer a thicker gravy? Then potato starch offers a solution.
