Preparation
- Wash and thin the mint, chop half of it. Cut the pork into thin strips.
- Put the slices of pork in a saucepan, add the broth, soy sauce, sugar, chopped mint and pepper.
- Let reduce for 10 minutes over low heat, until most of the liquid is absorbed.
- Soak the vermicelli in boiling water to cook them, then drain them.
- Soak a sheet of rice in lukewarm water. Place it on the work surface covered with a damp cloth.
- Arrange a handful of vermicelli on one side of the leaf, add 2 or 3 strips of pork and 2 or 3 mint leaves.
- Fold the top and bottom of the sheet, then roll it up on itself, holding the filling firmly.
- Check that the edges are well welded, if not wet them to close the roll.
- Serve hot or cold with soy sauce to dip the rolls in.
