Preparation
– Hull the snow peas and blanch them for 1 to 2 minutes in boiling water. Drain them. Remove the ends of the zucchini then cut them into cubes. Peel and finely chop the shallots.
– Grate the lime to collect the equivalent of 2 tbsp. to c. zest. Squeeze the lemon.
– Cook the spaghetti al dente in salted boiling water, drain.
– Heat the oil in a pan, melt the shallots and zucchini for 5 minutes while stirring, salt and pepper. Pour in the snow peas, then the spaghetti. Add the lime juice and zest, the herbs and mix quickly. Cover with slices of goat cheese and serve hot.
