Wonderful, those summer days. But don’t you feel like standing in the kitchen for a long time and do you still want tasty, healthy and complete food? This cold vegetarian salad of pearl couscous and chickpeas is a great choice.
Ingredients

150 grams of pearl couscous

1 can of chickpeas (400 grams)

400 grams cherry tomatoes

1 red onion

Small bunch of fresh parsley

Small bunch of fresh coriander

2 tablespoons olive oil

2 tablespoons tomato ketchup

1 tablespoon lemon juice
-
½ teaspoon chili flakes
-
1 teaspoon ras el hanout (spice mixture)

Optional: feta
Preparation
Cook the pearl couscous according to the instructions. Meanwhile, drain the chickpeas. Peel and chop the red onion. Cut the tomatoes into slices, finely chop the fresh herbs. Mix olive oil, tomato ketchup, lemon juice, chili flakes and ras-el-hanout with the warm couscous and let it cool. Mix the tomatoes, onion, chickpeas and herbs into the cooled couscous. Season with salt and pepper. Serve with crumbled feta cubes, if desired.
