With a drink or an extensive brunch: rolled salmon pancakes. Very easy to make and delicious!
Ingredients

For the pancakes:

75 grams of flour

1 egg

250 ml milk

butter

For the filling:
-
2 tablespoons cottage cheese
-
125 ml crème frache
-
1½ tablespoon grated horseradish (jar)

100 grams of smoked salmon

30 grams arugula
Preparation
Make a batter for the crepes with flour, egg and milk. Heat some butter in a frying pan and make pancakes from the batter. Let them cool. Stir the quark with the crème frache and horseradish. Season with salt and pepper. Spread 1 crêpe with 1 tablespoon of this cream, cover with a slice of salmon and put some arugula on top. Roll up the crepe tightly. Repeat with the other crepes and wrap tightly in cling film. Keep them in the fridge. Before serving, cut the crepes into 5 cm pieces and serve with the rest of the cream.
Tip
The pancakes are also delicious with (parma) ham and tomato tapenade.
