Preperation
- Wash the strawberries separately and hull them. Cut them into quarters and a few into slices.
- Fry the gariguettes with the vergeoise and the pepper for 2 minutes, place in a soup plate, add the other strawberries, keep a few slices per plate to decorate.
- Melt the pistachio in lukewarm milk, add the cream and pour it into a siphon, turn on the gas, stir and refrigerate for 30 minutes.
- Cover the strawberries with emulsion and sprinkle with cocoa nibs.
- Decorate with strawberries and a few currants.
