Peppers stuffed with a vegetarian filling. Delicious and always a joy to see on the table.
Ingredients

4 small or 2 large bell peppers

1 onion

1 clove of garlic

2 tablespoons olive oil

2 tablespoons pine nuts

200 grams of vegetarian minced meat

2 tablespoons tomato paste

2 tablespoons raisins

1½ teaspoon cinnamon

small bunch of parsley

1 mozzarella (125 grams)

paprika powder
Preparation
- Preheat the oven to 180°C. Cut the peppers in half, leave the stem on and remove the seeds. Clean and finely chop the onion and garlic.
- Heat the oil in a frying pan and fry the onion and garlic over a low heat. Add the pine nuts and let them color. Add the vegan minced meat and fry for a while. Add the tomato paste and fry for a while.
- Add raisins, cinnamon, salt and pepper. Chop the parsley finely and add it.
- Fill the peppers with the mixture. Cut or pluck the mozzarella into pieces and divide it over the filling. Place the peppers in a baking tray lined with baking paper and let the peppers cook in the middle of the oven for about 20 minutes.
- Then sprinkle them with a little paprika.
Tip
Delicious with (whole wheat) spaghetti and a salad.
