Ultimate leftover recipe of stale bread and leftover vegetables
Ingredients

1 tbsp oil

1 onion, chopped

1 clove garlic, crushed

400 g vegetables

Pepper and salt

At least 6 slices of stale bread

3 eggs

250 ml cream

100 g cheese, grated
Preparation
- Preheat the oven to 180 degrees Celsius.
- Heat the oil in a frying pan and fry the onion and garlic.
- Fry the vegetables briefly with some salt and pepper. Depending on the types of vegetables, you can add herbs such as basil or thyme. Then turn off the fire.
- Place the old sandwiches on the bottom and against the edges of a springform pan. Tear or cut the slices of bread into the correct shape.
- Divide the vegetable mix over the bread-covered springform pan.
- Beat the eggs well with the cream and about half of the cheese and pour over the vegetables.
- Finally, sprinkle the remaining cheese over the filling and bake the quiche for 30 minutes or until the filling is set and the top is nicely browned.
Tip
First test with a little water whether your spring form is waterproof. If not, it is better to make the quiche in a closed cake tin.
