She explains that before we eat our rice, our pasta or any other food that releases starch, we should cool them for several hours in the refrigerator. This would make it possible to make “resistant starches”, which are called in English MAC. The cold transforms the starches and makes them more useful for the microbiome, but also for the immune system, she explains. Thereafter, you can completely reheat them, without losing this benefit.
An ideal recipe for the intestines
She also offers a recipe that she describes as ideal for the intestines, based on quinoa (cooled 24 hours after cooking). As a reminder, the latteradvantage of being digestible, of being satiating, but also to have a low glycemic index. It is both a source of magnesium and protein, which does not contain gluten and which promotes intestinal transit, like its flora!
You will need: a cup of quinoa cooked in two cups of water, a can of chickpeas, half a chopped red onion, Japanese seasoning such as Nori Komi (1.5 tablespoons), another spoonful of garlic black, one to two cups of chopped fresh cabbage, half a cup of fermented cabbage and another of fresh chili. To this, you can add another protein, she says: meat or fish.
