“Industrial” preparations can also be rich in additives : stabilizers, emulsifiers, acidity correctors, aromas, flavor enhancers…
More avocado, therefore more natural
Among the guacamoles manufactured by private labels, there is a product containing 3.7% avocado… and 30% water (as well as various additives).
A word of advice: read the labels carefully. Look at the order of arrival of the avocado in the list of ingredients, classified in descending order of importance: it must appear first.
Homemade guacamole: less salt
Like many special aperitif products, guacamole can be quite salty. At home, we try to have a light hand: the Tabasco (sauce made from red pepper) already contains salt. L’onion and lemon are enough for seasoning.
Homemade guacamole: 3 original ideas to vary the flavors
Make a poi-camole: mix peas (fresh, cooked, or canned), pass through a sieve to remove the skins, and season with olive oil and chilli.
Compose a zucchini-camole: sauté diced zucchini in olive oil until they have released all their water, mix with garlic, lemon and chilli.
Prepare an arti-camole: mix cooked artichoke bottoms with lemon, olive oil, chives, salt and pepper.
