Preparation
- Rinse the cucumber and dry it well. Cut it into sections 10cm long then cut each into thin strips. Cut the smoked salmon slices into strips. Peel and slice the red onion.
- Arrange 4 cucumber strips on a plate; side by side, overlapping them slightly. Spread a little smoked salmon, red onion rings, then cover with cucumber slices. Finish with a few strips of salmon, onion, a few strips of cucumber, a little chopped mint and a turn of the pepper mill.
