Ingredients
- 100g of sundried tomatoes in olive oil
- 1 handful of baby spinach (in a bag)
- 350g of spaghetti
- 1 pod of saffron
- 3 tbsp. to s. chopped basil
- 300g mackerel fillets
- 1 organic lemon
- 3 tbsp. to s. soy sauce
- 2 tbsp. to s. olive oil
- Salt pepper
Preperation
- Take three strips of zest from the lemon, boil them then chop them finely.
- Toss with the soy sauce, oil, salt and pepper. Put the fish fillets in a dish and drizzle with the sauce.
- Drain the tomatoes, cut them into small pieces.
- Cook the spaghetti in salted boiling water with the addition of saffron. They must remain al dente. Drain.
- Heat a frying pan, brown the mackerel fillets for 5 minutes then cut them into pieces.
- Put the spaghetti in a pan with the pieces of tomatoes and the spinach leaves, mix and then add the pieces of fish, a little lemon juice and the basil.
- Mix gently.
