Preparation
- Cut 2 Victoria pineapples in half, hollow out their hearts with a knife and cut the flesh into strips.
- Slice 4 sea bass fillets, place them in a bowl with 10 cl of coconut milk, 2 tbsp. to s. olive oil, the juice of 1 lime, salt and pepper, 1/2 bunch of chopped cilantro.
- Leave to rest for 10 minutes.
- Garnish the pineapple halves with the marinade and pineapple strips.
- Ultra-digestible! The acidity of the lemon juice helps “cook” the flesh of the fish.
