Really handy to have in stock in the freezer: fruits and vegetables. It is cheap and easy, the choice is very large and you can always quickly put something on the table. Like this lemon pasta with pesto spinach, for example.

450 grams leaf spinach (frozen)

150 grams spiral pasta

1 onion

1 clove of garlic

1 lemon

3 tablespoons olive oil

200 grams chicken fillet cubes

2 tablespoons pesto
Preparation
Let the spinach thaw. Cook the pasta according to the instructions. Chop the onion and garlic. Scrub the lemon and finely grate half of the yellow zest. Heat 2 spoons of oil in a frying pan and fry the onion and garlic together for 2 minutes. Add the chicken cubes and fry for a few minutes until they are light brown and cooked through. Season with salt and pepper and toss the spinach with the pesto through the chicken. Heat through and season with some lemon juice. Drain the pasta and mix in 1 tablespoon of olive oil and the lemon zest. Serve the pasta with the sauce on top or mix everything together before serving. Delicious with some grated Parmesan cheese.
Tip
Mix some strips of dried tomato into the pasta for extra color and taste.
