Do you eat soy? No ! Well, apparently you are wrong because everything suggests that we have here one of the major foods of the 3rd millennium.
For Europeans, soy has an exotic side while it is the world’s leading food since it feeds 2 billion people, the vast majority of them Asians. However, this plant, from the bean family, then adapted perfectly on the American continent, then in Europe and even in France where 110,000 hectares were planted. Soy is a fashion phenomenon, certainly since it was first promoted by the Ayatollahs of French anti-gastronomy. While waiting for our great chefs to come to the aid of this excellent product, it will be the doctors who will try to convince you of the benefits of soy. Without becoming a vegetarian, it is obvious that we must favor plants to clean up our plates a little. Soy is an excellent source of protein: 40% which makes it the richest vegetable food. The rest is made up of a little 18% fat, 4% mineral salts and 38% slow sugars.
Animal AND vegetable proteins
Protein is what is found in meat. There are animal and vegetable proteins. We know that they should be consumed in roughly the same amounts every day. However, in France, the ratio is 1 to 3 in favor of the animal. However, there is as much protein in 100 grams of soy as in 200 grams of fish. Then, it is a food which, if it contains some fats, is completely devoid of cholesterol. It is therefore easy to understand that this vegetable represents an effective way to rebalance our modern diet. But the “soy miracle” does not end there. Modern medicine is increasingly convinced of the role of diet in certain cancers. The most recent studies show that the risk of breast cancer, for example, appears to be lower in women who consume soy compared to those who consume it only episodically. Another application, but this one very publicized, the role in menopause. An undeniable action on hot flashes, thus offering perhaps a natural alternative to women who cannot stand substitution treatments. And the list doesn’t end there. Osteoporosis, renal failure, work is underway.
It remains to impose soy in our traditional cuisine, but here we are leaving the medical field and I leave this heavy task, oh so exciting, to all the cooking competitions and cooking shows that are popping up everywhere.
