Preperation
• Soften the gelatin in a little cold water. Mix the red fruits and pass them through a sieve to collect 175 g of mash. Heat in a small saucepan, add the drained gelatin off the heat and stir to melt well. Let cool.
• Whip the whipped cream using a mixer. Mix the fromage blanc and the fruit purée, then add the cream and the whipped egg whites. Pour into ramekins that you will have enhanced with a strip of baking paper.
• Take 2 hours in the freezer. To serve, remove the strip of baking paper to let the soufflé emerge from the ramekin. Optional: garnish with a fresh raspberry and a mint leaf.
