Ingredients

100 grams dried (unsulphured) apricots

5 eggs (you use 5 egg whites and 2 egg yolks)

pinch of salt

200 grams grated coconut

1 tablespoon melted butter

50 grams extra dark chocolate
Preparation
Step 1: Soak the apricots in hot water for hour. Drain and finely grind the soft apricots in a food processor.
Step 2: add a pinch of salt to the egg white and use a whisk or mixer and beat until fluffy and stiff.
Step 3: Take a mixing bowl and add 2 egg yolks, the grated coconut, the melted butter and the apricot. Finely chop the chocolate. Mix this together with 50 ml of water through the coconut mixture and carefully fold in the egg white.
Step 4: Preheat the oven to 175°C. Line a baking tray with baking paper.
Step 5: Remove a ball from the batter with an ice cream scoop and press the batter together in your hands to form a golf ball size ball. Place the balls on the baking tray and flatten them slightly.
Step 6: put the coconut macaroons in the oven and bake them for about 15 minutes. They are done when they are just starting to brown. Let them cool completely.
