This dish is a fresh, powerful combination of ingredients from Italy, Greece and the Middle East. It is very easy to prepare.
Ingredients

3 courgettes, each cut lengthwise into 5 slices

2 tablespoons extra virgin olive oil

50 g goat cheese, crumbled

2 ripe tomatoes, seeds removed and diced

400g can of chickpeas, drained and rinsed

1 tablespoon fresh mint, chopped

grated zest and juice of 1 lemon

1/2 teaspoon chili flakes

salt and freshly ground black pepper
Preparation
Preheat a grill pan or frying pan. Brush the zucchini slices with some olive oil and fry for 1 to 2 minutes on each side until they have brown streaks. Season to taste and divide loosely over a large bowl. Sprinkle the courgettes with the goat cheese, tomato pieces and chickpeas and drizzle with the remaining olive oil. Add the mint, lemon zest and chili flakes and sprinkle some lemon juice over the dish. Season further with salt and pepper.
