Preparation
- Wash the fennel bulb then slice it very finely.
- Peel the grapefruit raw. Separate the quarters then remove the skin.
- Drain them in a colander over a bowl to collect the juice.
- Arrange the fennel and grapefruit pieces in a salad bowl.
- Whisk the grapefruit juice with the lemon juice, salt, pepper and olive oil.
- Drizzle the dish with this sauce and mix thoroughly.
- Decorate with sprigs of fennel or parsley. Serve well chilled.
