the shiitake (oak lentin) is the second most consumed mushroom in the world for its many health benefits. However, the picking or consumption of this mushroom raw may cause toxic skin effects. This shiitake skin disease is well integrated in Asia but still little known in France.
Hence the warning from the Directorate General for Competition, Consumer Affairs and Fraud Control (DGCCRF).
Cook the shiitake mushroom well
The organization recommends cooking the shiitake mushroom, whether purchased fresh, dried or powdered, before eating it can cause toxic dermatosis, characterized by a severe rash all over the body.
This toxic reaction occurs 24 to 72 hours after consuming mushrooms raw or undercooked and most often regresses after eight to fifteen days without special treatment.
If after consuming these mushrooms, you notice the appearance of one or more symptoms of intoxication, depending on the type of mushroom, (abdominal pain, nausea, vomiting, diarrhea …), immediately call 15.
