Preparation
- Peel the celeriac and onion. Cut everything into pieces and put in a pressure cooker.
- Add the celery stalks cut into sections (keep the leaves for decoration), and the zucchini cut into slices.
- Salt and pepper, cover with water and cook for 10 minutes from the pressure rise.
- Take out the vegetables using a skimmer, put them in a blender with the soy cream and three ladles of cooking water.
