150 grams of bulgur

1 teaspoon ground cumin

1 teaspoon ground coriander

3 tablespoons tomato juice

2 tablespoons olive oil

2 tablespoons lemon juice

½ cucumber
-
250 grams of small roma tomatoes or snack tomatoes

½ pomegranate
-
small bunch of fresh coriander
-
small bunch of flat parsley
-
falafel balls (about 200 grams)

50 grams of mixed lettuce

100 grams of black olives
Preparation
- Cook the bulgur according to the directions on the package. Drain and mix in the dried herbs, tomato juice, 1 tablespoon olive oil and lemon juice.
- Toss well and let it cool. Wash the cucumber and cut into small cubes.
- Cut the tomatoes in half and remove the seeds from the pomegranate. Finely chop the fresh herbs.
- Heat the other tablespoon of oil in a frying pan and fry the falafel according to package directions.
- Meanwhile, fold the finely chopped fresh herbs and the cucumber through the bulgur.
- Divide the salad between two bowls.
- Garnish with the lettuce, tomatoes, olives, pomegranate seeds and falafel. Delicious with tzatziki.
