Take something other than bread for lunch. Bulgur salad for example!
Ingredients

100 grams of bulgur

2 spring onions

3 sprigs of parsley

3 mint leaves

½ lemon

2 tablespoons olive oil

1 tablespoon tomato ketchup

Pinch of ground cumin

200 grams cherry tomatoes

¼ cucumber
-
80 grams (goat) cheese or feta
Preparation
Cook the bulgur according to the directions on the package. Drain and drain well. Clean the spring onions and cut them into thin rings. Finely chop the parsley and mint. Squeeze the lemon. In a bowl, mix the bulgur with the spring onions, fresh herbs, lemon juice, oil, tomato ketchup and cumin. Cut the tomatoes into quarters and the cucumber into tiny cubes. Spoon this through the bulgur and season with salt and pepper from the mill. Serve the bulgur in two bowls or jars and place the (goat) cheese or feta in cubes on top. Delicious with a seed cracker.
Ready extra fast?
Use couscous instead of bulgur. You just have to soak it in hot water.
