150 grams of whole-wheat couscous

150 grams smoked salmon

Preparation
- Wash the piece of pumpkin. Cut the pumpkin into pieces and remove the threads and seeds. Cut the pumpkin pieces into cubes.
- Clean the green beans and break them twice.
- Peel the onion and cut it small.
- Fry the onion with the cumin seeds in the hot oil. Add the diced pumpkin and green beans with 100 milliliters of water. Stew the vegetables with a lid on the pan for about 12 minutes.
- Bring 250 milliliters of water to a boil.
- Place the couscous in a bowl and pour the boiling water over it. Mix everything well and let the couscous soak for 10 minutes, covered.
- Cut the salmon into strips.
- Wash the parsley and chop it small.
- Mix the vegetables with the couscous and season with pepper or paprika. Divide the couscous between 2 bowls, arrange the salmon on top and sprinkle with parsley.
