Delicious with potatoes, beets and pumpkin.
Ingredients

250 grams of beef ribs

1 onion

1 clove of garlic

1 stalk celery

2 tablespoons liquid margarine

½ tablespoon tomato paste

125 milliliters of stock with less salt

50 grams cherry tomatoes

5 olives
-
2 sweet potatoes
-
piece of pumpkin (about 400 grams)

250 grams of cooked red and possibly yellow beets

1 tablespoon oil
Preparation
- Cut the ribs into large dice.
- Clean the vegetables. Cut the onion and garlic into slivers and the celery into arcs.
- Heat the margarine in a frying pan. Brown the meat in it.
- Briefly fry half of the onion, garlic and celery.
- Fry the tomato paste for a while.
- Bring the stock to a boil and pour it over the meat. Let the meat simmer for at least 2 hours.
- Halve the tomatoes. Add the tomatoes and olives to the meat and simmer for another half hour.
- Scrub the sweet potatoes well and cut them into large pieces.
- Peel the pumpkin and remove threads and seeds. Cut the pumpkin into pieces.
- Peel the beets and cut them into wedges.
- Saute the rest of the onion in the oil. Add the potato and vegetables with a dash of water and simmer the vegetables for 10 minutes.
