A fresh salad for four people.
Ingredients

150 grams arugula

1 mango
-
2 avocados

100 grams of walnuts

1 tablespoon white balsamic vinegar

juice of 1/2 orange

4 tablespoons olive or nut oil

2 tablespoons coriander

1 red pepper
-
salt and pepper
Preparation
- Wash the red pepper and remove the seeds.
- Cut very finely.
- Finely chop the coriander.
- Mix them with the oil, orange juice and balsamic vinegar and add salt and pepper to taste.
- Peel the mango and cut it into coarse pieces.
- Roughly chop some of the walnuts.
- Peel and pit the avocados and cut them into wedges.
- Put everything together with the arugula and the dressing in a bowl or plastic container and mix well.
- Garnish with the remaining walnuts.
Tip
Add the whole avocado pit to the salad to prevent the avocado from browning and add a little lemon juice, if desired.
