If I make a smoothie with, for example, apple, orange, beetroot juice, carrot juice and kiwi and then freeze it in a cup, will the vitamins still be preserved?

What a good question! Vitamins are sensitive to air, light and temperature. This is especially true for vitamin C and to a slightly lesser extent for the B vitamins.
While preparing a smoothie, some vitamins are already lost, because oxygen is added. Vitamins will also be lost during freezing and especially thawing. However, a significant portion is also retained.
It is wise to let the juice thaw in a dark place. Also make sure that the juice is sealed so that less oxygen can get to it. Finally, another tip: alternate the smoothies with vegetables and fruit.
