A piece of cake in the morning, who doesn’t like it? Fried, boiled or whisked; it’s all delicious! Those who like variety can also try cloud eggs. This is the newest, hippest way of preparing eggs. There is no butter or oil involved and you can vary endlessly.

Preparation
- Preheat the oven to 230 degrees Celsius.
- Separate the egg white from the yolk of each egg (tip: that’s how you do that).
- Set the yolks aside and beat the egg whites until thick and fluffy.
- You can add extra ingredients to this to vary, such as cheese, tomato, bacon, spring onion, chili or other herbs.
- Then make two heaps of the egg whites on a baking sheet.
- Make a well in the egg whites with the back of a spoon.
- Then bake them in the oven for 5 to 8 minutes.
- Remove the baking sheet from the oven and place a yolk in each egg white.
- Slide the baking sheet back into the oven and bake the cloud eggs for about 3 more minutes.
- Garnish with some dried paprika or fresh chives if desired and serve on toast or – for lunch – on a bed of spinach. Cloud eggs are also delicious with a salad.
