On social networks (still) a “miracle” recipe is circulating to preserve your eggs “months, even years”. The trick would be to immerse them in lime water. But two scientists: Océane Sorel, virologist (The French Virologist), and a physics professor, known as Physigeeks on Instagram, strongly advise against testing.
They start by reminding that if the solution is “natural”, it is not without danger. “Lime water is calcium hydroxide in solution and it is a product that is corrosive,” recalls Physigeeks. Its PH is very high. What to remember? It is because we must handle with extreme care.
Dangerous and useless
If ingested, lime water can be dangerous And cause poisoning. Especially since eggs have a porous shell, underlines Océane Sorel, before specifying that we do not have proof that bacteria no longer develop when they are immersed in this solution.
And last information, for all practical purposes: an egg kept for too long loses its nutritional properties… So, this technique in addition to being potentially very risky, is not even really of interest…
How to properly store your eggs?
As a reminder, eggs must always be kept at the same temperatureto avoid “the phenomenon of water condensation on their surface”, underlines ANSES in a document on food conservation. In other words, avoid storing them in the open air before placing them in the fridge (and vice versa). They should especially not be washed before being stored, supports ANSES, which specifies that this “increases the porosity of the shell and allows the penetration of micro-organisms”.
Finally, broken eggs, and even simply cracked, should not be eaten. If you make preparations using raw eggs (mayonnaise, tiramisu, etc.), use very fresh eggs and keep everything cold, consuming it within 24 hours.
