Preparation
- Brush the lemon and orange under a stream of hot water, wipe dry. Take the zest and squeeze the fruit.
- Split the vanilla pod, collect the grains.
- Put them in a saucepan with the citrus juice, a few strips of zest and the empty pod.
- Peel the quinces, remove the core and the seeds, then cut them into small cubes.
- Put them in the saucepan, sprinkle with the orange juice and bring everything to a boil.
- Cover, cook for 10 to 15 minutes, until the diced quinces are tender.
- Remove the vanilla pod from the pan and add the agave syrup to the preparation, then cook for another 10 min.
