“ The first thing to look at when buying jam is the ratio of fruit to the sugar ratio. The fruit level should appear first, not the sugar level. The ingredient that appears first is always the one that is present in the greatest quantity », explains the Dr Jean-Michel Cohen, nutritionist and author of his new book The buying guide to eating well (ed. First) through which 700 everyday products are deciphered.
In fact, jam manufacturers are required to include between 35 and 65% of the fruit. Between a jam with 35% fruit and one with 65%, the impact on health is not at all the same.
The doctor also warns against glucose-fructose syrup likely to be present in the jam. It is a sweet liquid composed of glucose and fructose. “ It is linked to the rise in obesity since it metabolizes into fat. It may be conducive to fatty liver disease », adds Dr. Cohen.
4 jams you can buy without risk
Dr. Cohen recommends four references of jams to favor if you want to focus on a product more rich in fruit and limited in sugar.
